Our product pages say to store STEM bars in a cool, dark place. Light and heat speed up quality loss, and Callebaut warns that humid spaces lead to condensation on chocolate. A closed drawer or cupboard away from the stove, the dishwasher and sunny windows works well.

Chocolate Bloom: Fat Bloom and Sugar Bloom
That whitish film you sometimes see on chocolate is called bloom. Callebaut describes two kinds (Callebaut):
- Fat bloom: happens when cocoa butter crystals are not properly formed or stabilized. Callebaut says it shows up when chocolate was not tempered or was stored too warm, and that “heat will make cocoa butter migrate to the surface.”
- Sugar bloom: happens when moisture dissolves sugar on the surface and it recrystallises as a white film. Callebaut says “temperature shocks cause condensation, which leads to sugar bloom.”
All STEM chocolate is tempered, as our dosage chart page explains, so bloom on our bars usually points to storage, not production. In our experience, bloom mostly changes the look and texture. It is a sign to improve how you store your bars.
Signs a Shroom Chocolate Bar Has Gone Bad
Throw a bar out if you notice:
- Mould: any fuzzy spots or unusual growth.
- An off smell: sour, musty or rancid instead of chocolatey.
- Damage from moisture: a wet, sticky or broken wrapper.
- No label: if you cannot tell what the bar is or how strong it is, do not take it.
When in doubt, we would rather you discard a bar than take a chance.
Does Psilocybin Lose Strength Over Time?
It can. A 2021 study in Drug Testing and Analysis tracked psilocybin and related compounds in Psilocybe cubensis under different storage and processing conditions (Gotvaldová et al., 2021). It found the greatest breakdown in fresh mushrooms stored at -80°C and the smallest loss in dried mushroom material kept in the dark at room temperature.
That study looked at mushrooms, not chocolate, so treat it as background rather than a rule for your bar. It does support the simple advice on our labels: dark, dry and cool beats warm and bright.
Health Canada also notes that “the strength of magic mushrooms can vary greatly” (Health Canada). That is one more reason to start with a small piece from an older bar and wait before taking more.

Once you open a bar, air, moisture and smells can reach it. We suggest you:
- Rewrap it. Fold the original wrapper back over the bar.
- Seal it. Put it in an airtight container or a zip bag.
- Store it. Return it to the same cool, dark spot.

Taking a Dose From an Older Shroom Chocolate Bar
Here is how we would approach a bar that has been in the cupboard for a while:
- Check it first. Look for mould, smell it and read the label.

- Wait two hours. Psilocin peaks in the blood about 2 hours after an oral dose (Holze et al., 2023), so do not take more in that window.
- Keep it simple. Health Canada warns that mixing magic mushrooms with cannabis, amphetamines or alcohol raises the risk of serious side effects.
Storing Shroom Chocolate Safely Around Kids and Pets
A chocolate bar looks like candy.
